Perhaps the most regarded of Vodkas in the world, ABSOLUT Vodka is produced in a tiny village in Southern Sweden named, Ahus. With a history that dates back over 400 years, I'm sure you've had at least a drink or two in your lifetime in which this vodka was a key ingredient.
If not here's your chance to indulge. I was introduced to this week's cocktail at the 2011 Barbados Food, Wine and Rum festival which is a 4 day annual event held in the month of November. Cheers to you and the weekend!

Ingredients
2 parts ABSOLUT Vodka
1 part Bols Lychee liqueur
Splash of Simple Syrup
Sparkling Wine or Champagne
1 whole Lychee

Method
Add first 3 ingredients into a shaker with ice. Shake and strain into a chilled wine glass filled with ice. Top up with sparkling wine and garnish with the lychee.

Barbados Food, Wine & Rum Festival - Ambrosia II

A few months ago (two to be exact) I had the pleasure of attending the Barbados Food, Wine & Rum festival which featured top chefs from around the world like Chef Ming Tsai, owner of the award-winning Blue Ginger restaurant near Boston, MA; celebrity Chef Mark McEwan (my favorite chef of the event!), head judge of the Food Network's Top Chef Canada; and Chef Marcus Samuelsson owner of the Red Rooster Harlem in New York, just to name a few.
The event was well attended, and I must say the food was every bit as tantalizing as it looked. Luckily, I came away from the event with a few good cocktail recipes that I'll be sharing on this blog over the next few weeks. So as you head into another weekend, no matter where you are you can quickly mix up this recipe and experience a refreshing, tropical holiday escape....Cheers!

Mount Gay Tropical Passion

Ingredients:
2 parts Mount Gay Eclipse Rum (the best rum brand in the world!)
1 part Passoa (passion fruit liqueur)
1 part Bols Creme de Banane
2 parts Pineapple Juice

Method:
Combine all ingredients and shake with ice. Pour into a highball glass and garnish with pineapple and a cherry.

Call me a piglet, but there is something so rewarding about learning the culture of a country through my taste buds. In Australia, because the population is made up of such a melting pot of cultures and ethnicities, they have an incredibly diverse and interesting food scene. There is also the fact that they have some of the finest wine-growing regions in the world, and an abundance of great local produce. Yep, dining in Australia is a treat for the senses, and I'm about to take you on a culinary journey. Whether you’re living it up in Brisbane apartments and Sydney hotels or camping under the stars with some bush tucker at Uluru, the food and wine of this country will seduce you as much as the beaches and wide open spaces.

Bush Tucker is the name given to food found in the bush and created using traditional Australian Aboriginal techniques. The Australian Indigenous people are the rightful owners of the land, and bush tucker is one of the traditions that has remained, even throughout colonization. It involves grinding grains to make bread, finding berries and grubs (eek!) that can serve as a good source of protein and understanding where you can
find food and water. Bush tucker is a learning experience about the way indigenous people used to live as much as it is a way of eating, so the best way to experience it is with an Indigenous guide in the outback somewhere.

Chinatown in Sydney is a great hub of all things Asian, and a meal there will not only prove delicious, but inexpensive, too!

This famous Singaporean dish is famous the world over, but there is no better place to taste it than in the city of its origin. A mud crab is usually quartered, doused in herbs and a healthy amount of chili (remember to ask for a mild version if you’re not good with spicy things—the Singaporeans like theirs HOT) and simmered until the meat inside is fragrant and silky. It is usually served with generous helpings of crusty bread for dipping up the remaining sauce. Have it with an ice-cold beer to take some of the spice away. Delicious!

This Malaysian fruit is quite the conundrum. Its smell has been described as having the aroma of dirty feet, gasoline, death and manure, among other things, but the sweet fruit inside is so good that people brave the stench each day to get into the middle of it. It’s perplexing to the human physiology to eat something that smells so vile and yet tastes so good, but trust me—if you block your nose for the first part (or better yet, have someone else peel it for you) the fruit is worth the pain. Many hotels in Malaysia make an irresistible cocktail from the fruit of the Durian, which is well worth a taste and comes with the added bonus of you not having to smell the skin!

One joy of travel is sampling the variety of foods available in different regions of the world. While one wouldn't want to discourage this, in regions where hygiene standards differ from home, it's worth being a little cautious initially, to ensure one doesn't get sick. Your travel insurance might cover you for medical bills should you eat the wrong thing, but it's best to try and avoid any problems to start with.

Make Sure It's Fresh
The sight of meat being chopped up on the street, and being kept un-refrigerated or not chilled is enough to send some travellers running back to the hotel restaurant. While local health regulations (if these are in place) may mean such food preparation is permitted, it would be a shame to miss out on many local delicacies out of fear. Instead, be selective about where you eats. Ramshackle street restaurants may not provide the creature comforts of home, but so long as food is prepared properly, and preferably cooked fresh in front of you, the chances of becoming ill are dramatically reduced.

Pick Restaurants with Plenty of Clientele
A regular flow of diners is a reassuring sign. Not only does this indicate that the meals on offer are probably pretty tasty, it also means that ingredients are being constantly used. You could therefore be pretty confident that meals are made with pretty fresh ingredients. If there are plenty of locals eating at a restaurant in question, then this is also encouraging. It means that the food is likely to be authentic flavour wise, and most likely a good meal, if they are reliant on local customers more than less knowledgeable travellers. One word of caution is that local stomachs may be more adept to handle local food than the stomachs of westerners
used to food prepared differently.

Speak to Other Travellers
In some tourist hot-spots, the majority of restaurants may cater predominantly to the tourist trade, with local restaurants almost non existent. Again, a good sized clientele is an encouraging sign, but if the majority are tourists, they may only be in town a couple of days and unsure of where to eat. It's therefore worth asking some fellow travellers as to the state of the food. Upon considering a restaurant, nab someone as they come out to get a good idea as to whether it's a good idea to eat there or not.

Be Cautious with Water and Ice
Tap water is not always safe for drinking. Make sure you find out whether this is the case or not at your intended destination. Bottled water is often commonly available if tap water is not satisfactory. In remote areas, boil water first if there are no other options. Water purification tablets are a handy thing to pack away in the luggage for such situations. At restaurants, if you are served with water or ice, try to establish whether it is made from purified water.

A little bit of sensible caution goes a long way when dining on holiday. You shouldn't eat just anywhere, but also shouldn't shirk at the chance of trying something new. These tips help reduce the chances of falling ill, without minimising the opportunities to go out and discover local culinary delights. Having a cheap travel insurance policy for your trip though, is also advisable.

Cocktails From Around the World: African Lullaby Cocktail

If you don't know by now, I love a good cocktail and the more I try the more I want to try. I came across this South African cocktail, aptly named African Lullaby, that's made with the award winning, Amarula Liqueur. Amarula is made in South Africa from the fruit of the African Marula tree (also known as the Elephant tree).

The Marula fruit forms an integral, sacred part of African culture. The ever popular, Amarula liqueur can be described as having a sweet, fruity caramel flavor, and has become one of the biggest sellers in cream liqueurs.

With storytelling being a great African tradition, it is no wonder then that this African Lullaby is just what you need to relax and unwind after a long, stressful week. Here's to a great weekend!

African Lullaby

Ingredients
2 oz Amarula Cream Liqueur
1/2 oz Coconut milk
4 oz Milk
1 dash of Nutmeg
1 cup Crushed Ice

Method
Combine all ingredients in a blender on high speed. Pour into a pilsner glass, and garnish with a red cherry.

Located on Front Street, Philipsburg is the Guavaberry Emporium where the "Legendary Island Folk Liqueur" of St. Maarten is made. Guavaberry liqueur is made from a locally grown wild berry found in the central hills. The Guavaberry brand has become an essential part of the island's culture and it is there at the Emporium that the island's Guavaberry Colada cocktail was invented. Next time you're in Philipsburg, stop by the Emporium for a free tasting of this delicious cocktail.

Ingredients
2 oz Sint Maarten Guavaberry Liqueur
1 oz Cream of Coconut
3 oz Crushed Pineapple
1 Pineapple slice or chunk
Toasted Coconut
Dash fresh nutmeg
Ice cubes

Method
Put ice in blender, then add Sint Maarten Guavaberry Liqueur, Cream of Coconut, and crushed Pineapple. Blend well. Serve in a tall glass and garnish with pineapple slice, toasted coconut and fresh nutmeg.

Apart from cocktails, this versatile liqueur is also a great marinade for seafood, and meats like chicken and beef.

Sint Maarten & Saint Martin - More than a shopper's paradise!

Great Bay, Philipsburg, Sint Maarten

St. Maarten/St. Martin is probably the smallest land area divided between to two separate nations (Netherlands and France), and the most amicable division of land ever (that I know of anyways). Legend has it that a Frenchman and a Dutchman decided that the best way to determine who gets what land is for them to walk in opposite directions around the island, until they meet up again. The funny thing about it is that they accepted the results even though the Frenchman was clearly the winner. Of course this isn't what actually happened, but nevertheless the two nations have lived peacefully side by side for over 300 years.

St Maarten/St. Martin is a popular cruise ship destination and rightly so. It's a beautiful place, easy to get around (despite the traffic) and of course the shopping! While most people go to Philipsburg, St Maarten for shopping, where there is indeed a wide variety of top quality merchandise to be had at unbeatable duty free prices, there is much more to this dual nation island than endless shopping.

The French capital of Saint Martin is quite the contrast from the Dutch capital. It is more back, but full of the charm and chicness that you would expect of the French. This little gourmet fishing village and market is the place to be on Wednesdays and Saturdays for some of the freshest and best prepared seafood on island. A short 5 minute walk up to the now deserted Fort Saint-Louis will afford a most breathtaking view over the bay. If you still can't help but shop, there are plenty of stores here that will satisfy the tastes of the most refined haute couture connoisseur. From fine art, to cigars to gourmet chocolates and local delicacies you'll find it all in Marigot.

Not far from Marigot is Grand Case, which is without a doubt, the place to go for fine dining. It is well known throughout the Caribbean and perhaps further a shore as the "Gourmet Capital of the Caribbean". Here there are quite a few excellent restaurants to choose from like L'Auberge Gourmande, Spiga and Le Tastevin, each catering to every taste and budget. For an unforgettable experience have dinner overlooking the bay at sunset!

Orient Bay is infamous for its clothing optional policy, but this is mostly found closer to Club Orient which is the Caribbean's only Naturist Resort. Apart from nudists, this 2 mile stretch of white sand beach is great for watersports like snorkeling, parasailing and waterskiing. There are plenty of areas to get sumptuous treats and just bask in the beauty of the area. You will also notice a colorful array of rooftops nestled amongst the lush vegetation.

The Butterfly Farm

If you are traveling with children (and even if you're not) a visit to the Butterfly Farm or La Ferme des Papillons is a must. Imagine butterflies of every color and size, casually fluttering here, there and everywhere in a beautiful and tranquil garden setting. You get to see a wide variety of species from around the world accompanied by a most educational and entertaining guided tour. Be careful! You and your kids may not want to leave! There's also a souvenir shop here where you can fill up on interesting butterfly-inspired memorabilia.

Loterie Farm

For those who need to add a daring adventure to their travels, the Loterie Farm located on a lush nature reserve, is sure to deliver! Whether you prefer to hike through the trails or zip through the trees like Tarzan, this is a must visit place. They have three treetop adventure obstacle courses, one for children/teens, and two for adults - the Flyzone and the Flyzone Extreme for the all or nothing types. You can also sit back and relax in the Hidden Forest Cafe or Tree Lounge where tasty meals and cocktails are made from fresh homegrown ingredients.

Cocktails From Around the World: A Venetian Spritz

The Spritz is a fizzy cocktail that's quite common in Northern Italy, and is even said to be the official cocktail in Venice. It's fizzy and light, which makes it perfect for an apéritif, but it can be and is often drunk at any time of day.

This Italian cocktail can be made with Campari or Aperol (Orange Liqueur), sparkling wine (Prosecco) and club soda or seltz. Some say Aperol makes for a better Spritz, but you can be the judge. Next time you want to experience Italy have a Spritz and watch the sun go down!

Venetian Spritz
Ingredients
1.5 oz Aperol or Campari
3 oz Prosecco (dry sparkling wine)
Dash or two of Club Soda or Seltz
Orange Slice for garnish
Ice cubes

Method

Good Old Fashioned Bajan Mauby Drink

Mauby is a bitter-sweet, cold beverage found throughout the Caribbean, made from boiling the bark of the tree bearing the same name (colubrina elliptica) and flavoring the resulting bitter liquid with a variety of spices and brown sugar. Though every island has it's "perfect" blend, the truth is that it is an acquired taste - you either love Mauby or you hate it, there are no in betweens.

If I had to describe the flavor, I would say it is very close to the Sweet Tea that's famous in the Southern USA, but then again that depends on which island recipe you're using. Apart from having a strong bitter after taste, an ice cold glass of Mauby can quench thirst like no other! Many claim that is also good for lowering blood pressure, reducing cholesterol and fighting against diabetes. Either way it's a drink that you should try next time you visit the Caribbean.

As Mauby is quite popular on many of these islands, you can find it readily available in syrup form, where you just add water or bottled and ready to drink. Some islands even make it into a carbonated beverage, which I am still quite skeptical about.

Three or four months ago I came to the realization that I had been drinking Mauby made from bottled syrup (Sweet & Dandy brand to be exact) for longer than I care to admit. I wondered if I could go back to the authentic old-fashioned Mauby my mom used to make.

With this mission in mind, I went to the store to buy some Mauby bark, Cinnamon sticks, Brown Sugar etc. After weeks of staring at the ingredients in the pantry, I finally set out to make my first batch of the beverage. I thought my first attempt would have been a complete fail but it was right on! So here's the tried and true recipe. Enjoy!

Old Fashioned Bajan Mauby Drink

Ingredients
3/4 cup Cinnamon infused Mauby bitters (1/2 pk mauby bark 2 large cinnamon sticks, water for boiling)
2 cups brown sugar
4 dashes Angostura Bitters
4 tbsp Vanilla Essence
2 tbsp Mixed Essence
Dash of cinnamon
2 Litres Water

Method

1. To make cinnamon infused mauby bitters, boil half pack of mauby bark with 2 large cinnamon sticks for about 15 minutes. Be careful to watch as it will foam and boil over, lower heat.)

2. Measure 3/4 cup of bitters and pour into a large pitcher.

3. Add brown sugar, Angostura bitters, essence and cinnamon. Stir mixture to dissolve some of the crystals.

4. Add water and stir well.

5. Serve chilled or with ice.

These are basically stuffed pastries or bread, that are baked or fried and filled with anything from meat to cheese to fruit. In South America, you can find these delicacies in Argentina, Bolivia (salteñas), Chile, Colombia and Venezuela.

Bolivian Empanadas are called salteñas, and typically contain beef or chicken with potatoes, peas and carrots along with olives, raisins or hard-boiled egg. They can also contain cheese and have sugar icing on top.
Chilean Empanadas can have a variety of fillings but the most popular types are either fried and filled with cheese or baked and filled with pino, which is a combination of beef, hot peppers, onions, black olives, raising and hard boiled egg.
Colombian Empanadas vary from region to region but are typically made of corn or potato flour, fried or baked, stuffed with beef, rice, potatoes, peanuts or chorizo and served with a spicy sauce known as Aji or Picante.
Last but not least, Venezuelan Empanadas are usually made from corn flour and fried. They are typically stuffed with chicken, beef or white salty cheese, black beans or fried ripe plantains and served with hot sauce or guasacaca (similar to guacamole).

Ajiaco

This is a hearty potato soup consisting of two or three types of potatoes, corn on the cob, and pieces of chicken with a hint of the aromatic herb, guasca. This soup is often served with heavy cream, avocado and capers. There are many variations of this recipe, but you can enjoy this hearty soup throughout Colombia.

Small balls of cheese bread usually made from corn flour, tapioca flour or cornmeal. They are baked in mud ovens on banana leaves, but can also be baked in typical ovens. These small treats are a favorite snack food in Paraguay and Argentina.

Arepas

Flat, round, unleavened, pancake-like bread made primarily from cornmeal, water and salt. They can be fried, baked or grilled and are typically topped or filled with meat, eggs, fish, cheese, or salad. Arepas are a favorite food in Venezuela, but they are also quite popular in Colombia.

Patacones (Tostones or Tachinos)

These are twice-fried, thick slices of green or ripe plantains that are often accompanied with sauce or used to make sandwiches with chicken, beef and vegetables. Quite popular in certain parts of Venezuela, Ecuador and Colombia.

Bami Goreng

This is basically an Indonesian, dutch inspired dish consisting of fried egg noodles. It is quite popular in Suriname and is often served with vegetables and meat.

Crêpes Forestière

This delicacy consists of a savory crepe made with mushrooms and cheese. Try them next time you visit French Guiana, they're really good!

Ceviche

One of South America's best kept secrets for centuries, Ceviche consists of fresh seafood marinated in lemon juice and chili peppers. In Peru, Ceviche is considered to be the national dish and is often served with sweet potatoes (yucca) or corn on the cob. In Ecuador, it is served with popcorn or nuts and lots of onion.

The Parrillada

The Parrillada is a platter of slowly grilled or roasted meat (mostly beef) that is very popular in Uruguay and Argentina. You can also get a Parrillada Mixta which would consist of various types of grilled meat like sausages, chicken, beef and more. Imagine having all the meat you can eat and you will agree that the Parrillada is virtually impossible to resist and absolutely delectable!

This rich, spicy dish made of chicken, seafood, spices and coconut milk among other interesting ingredients is just bursting with exotic flavors. It is a delicacy in Northern Brazil and is believed to have West African origins.

Colonia Tovar, Venezuela - Sprechen Sie Deutsch?

I've always wanted to visit Latin America, and when the opportunity came for me to go to Caracas, Venezuela with a group of friends, I was there in a heartbeat. Venezuela is quite the place, from the busy subways of Caracas to the towering Kerepakupai-Merú Falls (Angel Falls) in the heart of the Canaima National Park, but nothing surprised or intrigued me more than a charming little town way up in the mountains called, Colonia Tovar. The fascinating thing about this town is that it is a German settlement in the middle of a Spanish speaking, Latin American country!

A brief look into history explains how this came to be. An agreement between the German and Venezuelan Governments saw the arrival of the first German settlers in 1843. This little town founded by Colonel Augustin Bodazzi and Alexander Benitz, was based primarily on agriculture. Colonia Tovar remained untouched by the world until 1960, and so pretty much everything about it is German-inspired. Perhaps the only thing "non-german" is the language spoken there, which is Spanish, of course.

Colonia Tovar is situated some 2000 km above sea level, so our ride there was pretty much all up hill. At times it felt like we were driving into the clouds, but it was just the fog that is a regular phenomenon at this elevation. When we arrived there, the first thing that struck me about this German town, was the architecture. Every building has a red clay tiled roof, and white or off-white walls intricately framed with dark wood, that is so typical of the Germans. The second thing that struck me was the presence of anglo-saxon peoples dressed in traditional German dress. If I didn't know any better, I would've believed I had gone through some kind of "worm-hole" and landed smack dead in the middle of Southern Germany.

Our first stop was, Arte Ceramica Tovar, a pottery store established by a German couple in 1959. During our lengthy stop here, we watched as they skillfully crafted some clay on the wheel, while they described the process to us. They even gave us a chance to test our knowledge and skills...of course we all sucked at it...but they sure made it look easy. Whether you are a local or a visitor their unique nature-inspired stoneware is sure to impress, with glazes and finishes that showcase their art heritage. From ornaments to mugs to fridge magnets, there's something for everyone. I came away with some gorgeous souvenir mugs.

Next it was time for lunch at one of the many excellent restaurants in Colonia Tovar offering typical German cuisine. An intensely flavored three course meal was served, which started off with a choice of fresh creamy soup...I chose split pea soup, while the others had Leek soup, Pumpkin soup etc. Though my soup was absolutely delicious it in no way compared to the main course. White rice, veggies and chicken. Looking at the rice you would not have guessed that it would be packed so full of flavor...it was as if they injected delicate flavors into each rice grain (yes it was that good!).

Dessert was an absolute treat. Sure you've had Strawberries and Cream but trust me you have not had THE best Strawberries and Cream unless you've had it German style in Colonia Tovar. I don't know where they got those strawberries from but they were huge, juicy and sweet! The cream on top just made it the dreamiest dessert I've ever had.

After a meal like that we needed to walk it off, so we spent some time browsing the shops and buying neat souvenirs. Then it was off to explore more places of interest in this quaint German town like the Museum and the church. I just want to say thank you to all my readers and followers on Twitter by inviting you all to welcome the weekend with a signature cocktail from the Diva! I am an island girl at heart and there's nothing more refreshing than a cold glass of fresh Coconut Water. Growing up my mom used to mix Coconut Water with Red Frutee (a local Barbadian Cherry flavored soda), and as an adult I decided to add some Malibu Rum to give it a kick. So Happy B'day to myself and Happy Weekend to you all! Cheers!

Cherry Coconut Fizz

Ingredients
2 parts Fresh Coconut Water
1 part Red Frutee or Cherry Flavored Soda
1 part Malibu Coconut Rum

Method
Mix all ingredients together in a pitcher and serve chilled. Garnish glass with a Maraschino cherry. Enjoy!

Tropical Fruit Wine-Making - Mango Wine

When I'm in the mood for wine, I usually just buy it from the store or a winery. I have never ventured into wine-making at home, though many islanders are known for making homemade wines from almost any fruit in season. In terms of quality I would say these wines are quite good too. If you are brave enough to try it, here's a tried and true recipe for Mango Wine. Cheers!

Mango Wine (adapted from crfg.org)

Ingredients
2 lb. fresh green mangoes
2 lb. sugar
5 tsp citric acid
1 tsp tannin
2 tbsp depectinizer
1 tsp yeast nutrient
wine yeast
water to 1 gallon

Method
1. Wash, peel and grate, crush or blend mangoes saving the juice.
2. Boil two quarts water with the sugar to make a syrup.
3. Let cool to near room temperature, then add tannin, citric acid, yeast nutrient and depectinizer.
3. Pour over the fruit pulp and juice.
4. Add water to make one gallon by volume.
5. Cover and store for one day at room temperature. This will allow the depectinizer to break down the fruit pulp and produce a better wine.
6. Add the wine yeast starter and let ferment in a primary fermentor for 6 to 7 days.
7. Strain off the sediment and place in a secondary fermentor with an airlock for 1 to 2 weeks.
8. When the fermentation has ceased and the wine has cleared, pour into bottles and seal.

This makes a light golden table wine that is perfect as a dry wine.

Barbados Island Tour in Rugged Outback Style!

Today's travel diary is written by Markiesha, my dear cousin and best friend, and co-owner of Baywater Tours. Here's her take on our recent excursion together in Barbados. If you ever plan on visiting the beautiful, tropical island of Barbados there are a couple of tours that you absolutely must consider doing. There is the Bajan Roots and Rhythms Dinner Show at the Plantation Garden Theatre, the Tiami Catamaran Cruise and the Atlantis Submarine to name a few.

However, today, I will focus on the exciting outback adventure of the open SUV island tours or what we Barbadians refer to as the 4X4 Jeep Tours. The 2 main jeep tours on the island are Adventureland and Island Safari.

Both tours offer their own unique and fun experience. I have had the privilege of taking both tours and I thoroughly enjoyed them. The most recent tour I’ve taken with FoodTravelDiva, is the Island Safari. This tour combined the historical education of a traditional Bus tour like J.C Williams Tour, with the rugged outback riding of any typical ATV tour.

Island Safari took us from coast to coast in fine outdoor style, allowing us to absorb some of the most breathtaking views that you will ever see anywhere in the world. We started on the West Coast/Platinum Coast which has been graced by celebrities like Oprah Winfrey, Simon Cowell, Prince Harry and Tiger Woods. Our tour guide was extremely knowledgeable, educating us on everything Barbadian from historical events to current topics.

Next we ventured toward the North and East Coast which are the more underdeveloped areas of Barbados. The North Coast is the most rural of all the coasts and the East Coast is mostly known for surfing. There, we made 3 stops for picture taking and refreshments which included your regular sodas, juices and for those that could handle some extra Bajan flavor… Jungle Juice otherwise known as Rum Punch.

I must admit that the rugged ride is what I enjoy the most about the 4X4 Jeep tours, which is probably why I enjoyed Adventureland’s tour a bit more. Adventureland’s tour is quite similar to Island Safari’s as it took us coast to coast allowing us to stop for picture taking and refreshments.

However in Adventureland’s tour, we travelled more off-road, a ride that I will always remember! Although, our Adventureland driver/tour guide did not go into as much historical depth as Island Safari’s guide, he sure was skilled at driving!

Both 4X4 Jeep tours offer different options where you can take a tour that is more catered to your taste. Of course, each tour is subject to your guide, the day, the mood and the company but if you try either of these tours, on any given day, it will be an adventure you will never forget and that’s a promise!

I know some of you may be interested in trying Island Safari's Jungle Juice, and you'll have to take the tour to do that, since they have a special pride in their (top secret) potion. This is not a drink for children nor amateurs. This is the stuff that makes you forget what happened in Vegas! Here's a recipe for Bajan Rum Punch which I estimate is quite close to their recipe. Enjoy!

Bajan Rum Punch

Ingredients
1 cup fresh West Indian lime juice
2 cups simple syrup
3 cups Mount Gay rum
4 cups fruit juice (Orange, Pineapple, Fruit Punch, Cranberry etc)
4 dashes Angostura bitters
freshly grated nutmeg

Method
In a pitcher, combine lime juice, simple syrup, rum and fruit juice. Add a few dashes of bitters and some grated nutmeg to taste. Serve chilled over ice.

Fish In Wine Sauce - Caribbean Style

When you live in the Caribbean, one thing is for certain, you tend to eat a lot of fish! There just seems to be an abundance of all kinds of fish, especially at this time of year when many have decided to give up meat and turn to fish for a source of protein. I came across the following recipe in The Multi-Cultural Cuisine of Trinidad & Tobago & The Caribbean, and I loved it so much I decided to share it! I find that it works well with fish like Tuna, Red Snapper, Mahi-Mahi and King Fish. Bon Appetit!

Fish In Wine Sauce
Serves 6 (adapted from cookbook mentioned above)
Ingredients
2 lbs fish fillets, seasoned and cut into serving pieces
1 tsp minced garlic
1/2 cup chopped green onion
1/2 cup sweet pepper
1/2 cup chopped tomatoes
1/4 cup sliced mushrooms1
1 tsp paprika
1 tsp chopped parsley
2 cups fish stock or broth
1/2 cup dry white wine
3 tbsp. cornflour
salt and pepper to taste

Method
Preheat oven to 375 F
1. Heat oil in a frying pan, then add garlic, onion, sweet pepper, tomatoes, and mushrooms and saute until onion is transparent and soft.
2. Blend in cornflour until smooth.
3. Gradually stir in fish stock and wine, stirring constantly until thickened.
4. Season with salt and pepper and set aside.
5. Arrange fish fillets in a greased baking dish.
6. Pour sauce over fish, sprinkle with paprika and bake in preheated oven for 30 minutes or until fish is cooked.
*Alternatively you can add fish fillets to the sauce and cook on the stove for 10 - 15 mins until fish flakes easily. Serve hot and garnish with parsley.

Want to hear a grown man scream like a woman in labor? Welcome to the Ejection Seat! This is an adrenaline-junky, thrill ride that is not for the faint hearted. I repeat - this is not for the faint hearted.

When I arrived at the Ejection Seat in Branson, Missouri, my fiance's sister and brother-in-law were already high in the sky and screaming for dear life (at least she was). I immediately started having serious second thoughts. I was thinking, what if that rope pops? What if I fall out? Is that thing sturdy? I mean I need some statistics here! With the help of my fiance's "encouragement" I inched closer and closer to the seat, and just when I thought I had enough courage to go through with it, I see laid out before my feet an outline of a body right at the base of the ride! It's fake but still, I don't need another reason to run away from this seat, like a chicken with it's head popped off!

I remove my shoes and anything else that could fall during the ride (can I remove myself?), I get in and the ride attendants strap me in from head to toe. Okay...I'm really gonna do this. (Mom I love you, you can have all my shoes.) I'm gonna hold on with all my might and I dare not open my eyes. This is the only way I'm gonna get through this. We begin to ascend, and every tug I feel sends me into hyperventilation. No, Desiree the ride has not officially begun. Keep it together, keep it together. I have no idea what to expect. All I pray is that I don't soil my pants. I don't know which is worst having calm in anticipation of pure hell or pure hell!

Then without warning, we are catapulted into the air, like a rag doll shot from a cannon. And you know the saying, what goes up must come down. And down we came! If it was possible for my organs to leave my body via my mouth, it would've happened. Mercy! Mercy! Somebody help me! I'm not ashamed to admit that I screamed non-stop for the entire ride. When it was over, I yelled some more, "Is it over, please tell me it's over!". Whoa mama! That was a ride! I get chills every time I remember the experience, and I still can't believe I survived the Ejection Seat. Will you?

A Romantic Dinner For Two - Inspired by My Restaurant Favorites

There is just something about food that excites our senses and makes us feel good. When you really think of it eating food involves at least 4 out of 5 of our senses (sight, smell, taste and touch), so in that sense (no pun intended) it's a total body experience. Food has the ability to comfort us, and get us in the mood for love.

Since I know that right now, many are looking for ideas and inspiration to craft the perfect romantic dinner, I have picked my favorite restaurant foods (that I have tried so far) and created a menu that I hope will tantalize your taste buds as much as it has my fiance's and mine. Whether it's a special occasion like your anniversary or you just want to surprise your sweetheart, give this menu a try!

Appetizer

Lasagna Fritta - The absolute best appetizer that has ever caressed my taste buds came in the form of a Lasagna Fritta, from Olive Garden. These little morsels are fried Lasagna pieces breaded with Parmesan cheese on top of Alfredo sauce served with marinara sauce and more parmesan cheese on top. Oh words cannot give justice to how good these Frittas are!

Spinach Salad with apples, almonds and dried cranberries. This fresh crisp salad can be served with your favorite sweet vinaigrette dressing.

What makes a destination "Romantic"?

I've always believed that everything French equaled Romance. I believed it so much that I learned French, thought I would marry a Frenchman and live in France. Of course, I've since outgrown that notion (the Frenchman part), but it made me think about what really makes a destination "Romantic". Is it the location, the people, the food, the language, some magical dust that is sprinkled in the air? I mean, what really makes a place "the" place to go for lovers and those who want to find love?

I consulted the MSN Encarta and their definition of romance is "A spirit or feeling of adventure, excitement, the potential for heroic achievement, and the exotic." It can also mean, "fascination or enthusiasm with something, especially of an uncritical or inexplicable kind", and might I also add to that, the idea of seclusion. Now, we all know that France, Italy and Rome easily conform to these definitions, but what about the other countries and cities of the world? In my travels, there are three that stand out in my mind as good places for kindling and keeping the flame alive.

Maui, Hawaii

Maui is my favorite of the Hawaiian islands because it's got charm, it's laid back, and yet full of things to do. From the time you arrive at the airport you feel as though you're getting ready to be pampered. The meet and greet with the lei made me feel enchanting, like some kind of princess with a string of fresh cut scented flowers around my neck. The fresh pacific ocean breeze fills your lungs and you realize this is what life is supposed to be!

Whether it's a sunset walk along the beach, a stolen kiss 800 ft above in a tandem para-sail or exploring the beauty of the ocean together on a snorkel trip...Maui is the place to be for romance! The unique Polynesian culture lends an element of exoticism - from the language, to the food, to the dances - that makes you want to immerse yourself and kindle the flame.

Laurentian Mountains, Quebec (Canada)

What I find intriguing and romantic about the Laurentian region is the feeling of seclusion, the adventure, the unspoilt beauty and of course there's that French influence everywhere. At this time of year there's plenty of white, snow capped mountains, fresh crisp air, and frosty, starry nights creating a dreamy ambiance and plenty of excuses to snuggle up next to your loved one by the fireplace.

The Laurentian Mountains are well known in Quebec for their abundance of health spas. One of the key things that kill romance is bad health or a lifestyle that's too hectic. If that sounds like you, I would highly recommend a weekend spa getaway in the Laurentian Mountains and add to that some playful frolic in the snow...sounds like a recipe for romance to me!

Branson, Missouri (USA)

Yes you read right. I know Branson is a place filled with endless country music shows, and family entertainment but there is a quaintness to this place that I feel lends to romance.

Nestled amongst the picturesque Ozark Mountains, Branson affords lovers the opportunity to feel adventurous, excited, and secluded. Branson Landing for one, is a lovely courtyard type waterfront promenade lined with stores like Victoria's Secret (ooh la la!), and Bath and Body Works, overlooking Lake Taneycomo. As you walk along, clever street lamps play relaxing music.

Then there's the fire and water show where fire leaps and water spouts to the rhythm of the music. And not to be missed is a horse drawn carriage ride just for two that takes you out to the lake...my fiance and I did that one and it was nice! I must also mention the gourmet dinner cruises on Table Rock Lake and the many nature trails waiting to be explored.

In terms of hotels, there are two Hilton hotels (one right on the Branson Landing), the four diamond rated Chateau On The Lake hotel and spa, and if you prefer more seclusion, there are gorgeous fully loaded cottages tucked away in the hills. (And if you're still not convinced, this is where my sweetheart proposed to me!)

Pavlova and Great Australian Wine - Let's Celebrate!

January 26th, 2012 is a day that all Australians come together to celebrate all that's great about being Australian and living in Australia. Of all the things that identify them as a people and destination, like their charming accent, the endless beaches, wildlife, great outback, barbecues, superb snorkeling off the Great Barrier reef and world famous wines, Australia is also known for a scrumptious dessert called, Pavlova.

Pavlova is a meringue type dessert that will melt in your mouth. It's creamy, fruity and just down right good! What better way to celebrate Australia Day than with a slice of Pavlova and a perfectly paired glass of Pinot Grigio from Jacob's Creek, a world renowned brand of great Australian wine. Happy Australia Day!

Pavlova

Ingredients
4 large egg whites at room temperature
1 cup of Castor sugar, also known as "Berry sugar"
1 tsp of white vinegar
1/2 tsp of pure vanilla extract
1/2 cups of whipping cream
Fresh fruit such as strawberries, raspberries, kiwi fruit, passion fruit, bananas, blueberries
1 Tbsp fresh lemon juice

Method

1.Preheat the oven to 275F (140C) and place the rack in middle of the oven. Line a baking tray with foil and draw a 7 inch circle on the foil with the blunt edge of a knife (don't tear the foil). Set aside.

2.In a clean, medium-sized metal bowl, beat the egg whites with a clean electric mixer on medium speed. Beat until the whites form soft peaks.

3.Gently sprinkle the sugar into the egg whites, one teaspoon at a time. Don't just lump the sugar in the bowl and never stop beating the eggs until you finish the sugar. Your egg whites should now be glossy stiff peaks.

4.Sprinkle the cornstarch and vinegar on the meringue and fold in gently with a plastic spatula. Add the vanilla and gently fold the mixture again.

5.Now gently spread the meringue in the circle on the foil to make a circular base. Make sure the edges of the meringue are slightly higher than the center so you have a very slight well in the middle.

6.Bake the meringue for about 1 hour and 15 minutes or until it goes a very pale, pinkish egg shell color.

7.Turn the oven off and leave the door slightly ajar to let the meringue cool completely. As the meringue cools, it will crack slightly.

8.Just before serving, take the meringue out of the oven and remove it gently from the foil and place on a plate.

9.Whip the cream with the vanilla extract until it forms peaks. Prepare the fruit by washing and slicing.

10.Gently spread the cream to the top of the meringue with a spatula and arrange the fruit on top.

10 Essential Experiences in Niagara Falls, Canada

Niagara Falls, Canada is definitely a place that you should visit at least once in your lifetime. I've had the opportunity to visit twice in my lifetime (once as a child and second as an adult) and the last visit was surely better than the first, due in large part to the fact that I got to see and experience a lot more of this beautiful city. (Plus there was a whole lot more to do than the first time I went!). Though many suggest that summer is the best time to visit, I highly recommend visiting Niagara Falls in early Autumn (Sept-Oct) if possible, because the fall colors against this majestic waterfall is a true beauty to behold, and hotel prices are usually much cheaper.

When you visit Niagara Falls, you will quickly realize that there are tons of things to do, and if you're on a budget and limited time, you probably want to experience as much as possible without wasting time and money. So here's my list of 10 Essential Experiences in Niagara Falls in no particular order of importance.

Clifton Hill

This is without a doubt the entertainment strip of Niagara Falls. Hotels, restaurants and several attractions line this lively street. Whether you choose to stay there or just visit, be sure to stop by Ripley's Believe or Not, Movieland Wax Museum, FX Ride Theatre, and IMAX Theatre for a most amazing film on Niagara Falls.

Skylon Tower

There is no question that Skylon Tower is the tallest building in Niagara Falls. Overlooking the falls and Victoria park, Skylon tower offers both exceptional views and exquisite dining in it's unique revolving restaurant. There is also an observation deck at the top where visitors can see for miles and miles on a clear day. The lower level is home to the largest indoor entertainment center in Niagara featuring a wide range of high-tech games, perfect for all ages.

Journey Behind the Falls

This has to be the best way to experience the power and sheer awesomeness of Niagara Falls! The Journey takes you 150 ft through the bedrock to tunnels which lead to two portals behind the falls. Then you can walk onto the observation decks at the very foot of the falls. Be prepared to get wet! It doesn't get any better than this.

Maid of the Mist

Another great way to experience Niagara Falls. This tour takes you to the base of the American Falls and the basin of the Canadian Horseshoe Falls. You can hear and feel the thunder of the falls, and of course get wet! This is a half hour tour that you will not forget.

Niagara-On-The-Lake Bike Tour

Rent a bike and experience the great outdoors! This is a great way to get in some exercise during your stay. It's not only affordable family fun, but it is also a very scenic tour that allows you to go at our own pace. You can even plan to include a stop at one of the many wineries along the way. (Sunnybrook Farm Estate Winery is a good choice)

Oh Canada Eh? Dinner Show

Get to know Canada culturally in this musically charged Dinner Show, while you enjoy fine Canadian gastronomy. Some of the highlights include performances from characters like "Anne of Green Gables", lumberjacks and Mounties. Of course the full course meal is also a highlight with specialties like Fresh Atlantic Haddock, Roasted Prince Edward Island Potatoes and my favorite Maple Chocolate Mania Cake. It's an award winning show!

Montenegro (Crna Gora) - Must See, Must Do, Must Eat Things and Places!

One of the most exciting events at the Olympics for me, has to be the opening ceremony when each country parades its colors and athletes proudly. I don't know about you but hearing the name of each country just takes my breath away. They all sound so unique (obviously) and packed with history and culture (and scandals) that set each apart from the other. One country that captivates me with its name alone, is Montenegro ... It just sounds so enchanting and luxurious! I just couldn't help but explore this country, to see if it lives up to the sound of its name.

If you've never heard of Montenegro, or never thought of it for your next vacation - you may be surprised to know that this Balkan country offers all the things that make for an excellent holiday. And I'm not kidding...In Montenegro you can experience beautiful beaches, quaint coastal towns, hidden coves, towering mountains, green alpine spice-scented meadows, breathtaking lakes, good food and rich culture. Interested? Here are some must see, must do, must eat things and places in Montenegro.

Budva

First on my list is Budva, a fascinating coastal town of theatre, festivals, beautiful hotels, beaches (8 of which have won prestigious awards for high standards and services) and an amazing Riviera. You definitely must see the walls of Old Town Budva and Sveti Stefan - a hotel island considered to be the most beautiful building on the Montenegrin coast. To say that Sveti Stefan is unique would be an understatement. It's a fishing village turned world renowned hotel island with 118 medieval-like villas surrounded by lush vegetation and the lure of the ocean. Be sure to enjoy a Mediterranean style Montenegrin seafood meal in Budva and breathe in the fresh air...ahhhhhh!

If you can survive the hairpin drive to this museum town and the former royal capital of Montenegro, you will get to explore the rich history and culture of Montenegro. A visit here will not be complete without a visit to Njegusi where you can see how cheese, kastradina (smoked lamb) and sausages are made.

Meet the People
Experience true Montenegrin hospitality with a visit to the alpine cottages where the Montenegrin mountain people live. Legend also has it that miracles come true when you wish for one at the Ostrog Monastery.

Taste Montenegro
Now if you know me, you know that I can't end this post without a taste of Montenegro. Montenegrins enjoy fresh organic produce (I love this place!) and traditional cooking involves cooking food in a pot known as a "sac" under coals. Favorite ingredients include sour cream, yogurt, cow's and sheep's milk...and lots of meat.

Be sure to try some of these Montenegrin dishes:

Kacamak - made from barley, wheat, corn or buckwheat flour served with cheese and sour milk.
Peppers in sour cream
Lamb cooked in milk (see recipe here)
Durmitor Steak

Curried Lamb and Vegetable Chow Mein

As requested by @savorthethyme here is my Recipe for Curried Lamb and Vegetable Chow Mein. It's what's for dinner tonight!

Ingredients
1 lb Lamb Stew Meat
3/4 cup Leeks sliced
3 tbps Bajan Seasoning
3 tbsp Curry Powder
3 tbsp Red wine
1/2 Maggi cube
200 g or half pack of Chow mein noodles
2 cups Broccoli
2 medium potatoes cubed
1 tsp soy sauce
1 tbsp Ketchup
Black Pepper to taste
1/2 tsp Clove
Water for cooking

Method
1. Marinate Lamb with leeks, seasoning, soy sauce, red wine, curry powder, black pepper and clove.
2. Brown meat on stove approx 5 mins on medium-high heat
3. Add water and let simmer on low heat. Keep adding water as it drys out and continue to simmer.
4. When meat is almost tender add potatoes and more water. Wait 5 minutes.
5. Add broccoli and then chow mein noodles. Add maggi cube. Stir.
6. Let cook on medium heat, stirring often until noodles are done.

Serve hot | Serves 3 - 4

Recipe Spelled D-I-S-A-S-T-E-R? Not at all!

It's funny how recipes are created, invented if you would. When you really sit and think about how did that recipe you have come into being? Was it because you had none of this but some of that? That your taste buds told you a dash of this and a cup of that would produce culinary excellence? Was it perhaps that you were traveling somewhere and something caught your eye and your brain immediately started wondering how it would go with such and such that's been sitting in your cupboard for the longest time? It's just so fascinating.

I think cuisine is just like fashion in the sense that it comes from feeling, creativity, passion. I can't recount how many times I would start to cook a meal and just feel my way through it. Well that's exactly what I did this weekend. While traveling, and visiting friends I decided to cook up something special. Now when you're cooking in someone else's kitchen you quickly realise that you don't have all your "special" ingredients - this could spell D I S A S T E R! Or it could spell the creation of something pleasantly delicious!

Monterey Jack Raisin Cucumber Salad

Ingredients
1 medium sized cucumber peeled and diced
1/2 cup of raisins
1/2 cup of Monterey Jack cheese
1/4 cup chopped celery
Dash Black Pepper
3 tbsp Ranch Dressing
Turkey bacon bits (optional)

Method

Mix all ingredients together in a bowl and serve chilled.

I wanted to make a salad and those were the ingredients at hand! Enjoy...

Fresh Homemade Golden Apple Juice - It's a Bajan Delight!

For those of you who don't know what Barbadians (Bajans) call Golden Apples, it's a fruit known as a June Plum, that can be described as having the flavor of a cross between a young mango and a pineapple. Needless to say it's deliciously tangy!

I don't know if November is Golden Apple month, but lately my uncle has been bringing bags and bags of Golden Apples for us and since we can't eat all, why not make some Golden Apple Juice - a Bajan favorite?!

So here's what I've been making today. Give it a try, you'll love it!

Golden Apple Juice

Ingredients:
Golden Apples/June Plums (not too ripe) (the quantity is up to you - if you're like me, it's too many to count)
Freshly squeezed lime juice to taste (optional)
Brown sugar to taste
Angostura Bitters
Nutmeg
Spice
Water

Method:

1. Wash golden apples and cut into pieces (leave the skin on for better tasting juice).

2. Place golden apple pieces in a blender and add enough water to puree. Blend on high speed until pureed.

3. Strain puree using a strainer and a large spoon. You may need to do this 2 or 3 times.

4. Dilute juice with water and add sugar and lime juice and angostura and spices to taste. Stir and Strain again.

5. Chill and shake before pouring. Enjoy!

Thanksgiving From Afar

It's been a while since I last posted and that's because I've been swamped with work and travelling and working and travelling some more! I've finally found ... no Made some time to write a post and what better thing to post about than Thanksgiving!

In Barbados, we don't celebrate Thanksgiving, but I had the pleasure of experiencing an American Thanksgiving a couple years ago when I was in California. I must say it is a most splendid occasion. For one day people are actually thankful for what they have, unlike other holidays when people are upset about what they didn't get. Maybe that's what makes it such an enjoyable holiday!

This year, I'm thankful for many things - for love of friends and family, for a job (especially in today's economy!), for a home, for health, for peace in my life...for everything I've got and even for the things I don't. One of the highlights for me this year was getting engaged to the love of my life! So even though I won't be in the USA this Thanksgiving, I've still got plenty to be thankful for.

So while many are feasting on Turkey, pie and more pie, I will be reminiscing on my last Thanksgiving and looking forward to the next. I'll be getting ready to celebrate Independence Day in Barbados (Nov 30th)...and I'll also be dreaming about eating these exciting foods that I found on Foodista. May it give you some inspiration this Thanksgiving!

And of course, I've gotta have a good cocktail! I'm a sucker for Pina Colada!

Seychelles - An Unforgettable Dream Vacation

Whenever work was super slow, I'd pass the time by "traveling" to a destination I'd never heard of or been to via the internet. Then I'd day dream and imagine what it would be like to visit that place, and I'd plan a trip there as if I were fortunate enough to actually afford it. Yes I'd look for the most luxurious hotels and just gaze at the photos, imagining myself laying on the soft fluffy bed or sitting on the balcony with my gourmet breakfast while taking in the fresh crisp air blowing across the sparkling water and believe that it was blowing just for me..aahhh! And then I'd look at the restaurant photos and the menus, and pretend to order everything that looked good on the menu as if the chef were my personal chef. Have you ever done this? If you haven't let me tell you it's almost as good as traveling for real. In fact it's better because there are no airport layovers, rude travelers, or bad service and you never ever run out of money!

So that's what I did one painfully slow day I work. I packed my bags and took a trip over to Seychelles. Now where on earth is Seychelles? Seychelles (a multilingual nation with French, English and Creole being the main languages), I found out is actually located in the western Indian Ocean , approximately 1000 miles off the eastern coast of Africa. Yeah it's way out there, that's why I have to dream. What I found fascinating about this destination is that it is made up of 115 islands...yes you read correctly...1-1-5!! Wow that could make for a neverending vacation! And what's even more fascinating is that some of the islands are granitic (said to be the oldest and probably the only mid-oceanic islands of this kind) and some are coralline which presents an exciting combination of flora and fauna. Of the 115 islands though, only about 5 are the main centres of attraction. However, if you happen to be wanting to shed a few million dollars, who knows maybe you could own a little piece of paradise. But if you're like me, (yes I know this is a dream but I'm trying not to be too out of this world) then the main islands of Mahé, Praslin, La Digue, Alphonse and Desroches are where we want to be!

So here I am on Mahé (the largest island), and I can't wait to reach my hotel. Since I'm dreaming I will stay at the Maia Luxury Resort and Spa....this place captivates me. Just visiting their website took my breath away as I listened to the ever so gentle, hypnotic rhythms of the wind dancing with the harp and piano (at least that's what it sounds like). I chose to stay here because it looks like the kind of place you can only dream of - it's small and intimate - and oh so luxurious. I had a Villa all to myself, complete with a personal butler and panoramic views of the ocean...Ahhhh. Talk about a holiday for the soul. This place is nestled amongst the flora as though the two were formed from the earth together. Lush, scented, well manicured gardens entice you, beckoning you to stop and stare....and I do because I've got all day.

My room is everything I dreamed it would be - private, with panoramic views of the diamond kissed waters of the Indian Ocean. There's nothing to interrupt my view, nothing to interrupt my pleasure - no demanding boss, no unruly tourists, no loud music, no kids screaming - just the sound of the waves dancing with the sand and the breeze playing with my hair and running laps about my body...mmmm. I don't want to wake up. Let me stay here forever. I've got my own private verandah, an infinity pool, a private outdoor sunken bath that allows me to gaze at the stars while I enjoy a jasmine scented bath(and I've even got all the technological comforts of home if I want to stay connected). I just don't know how to act! Can you imagine honeymooning in a place like this? I guarantee you'd never forget it!

As if that's not enough to totally relax me. I decide to indulge a little bit more. So I head over to the Spa. Like Queen Latifah in the movie "Last Holiday", I'm about to live it up! Ooh I'm gonna get an Island Pleasure Combo - yes I'm gonna get my skin polished and exfoliated, and then I'm gonna get it massaged ... ahhh so invigorating! I'm glistening from head to toe with skin I thought had left me for good when I turned 3yrs old.

Now I'm just plain hungry! What's good to try? I'm in luck! Their restaurant Tec Tec is the only gourmet restaurant on Mahé. Ooh can't have a dream holiday without a treat for my culinary senses now can I ?! Then I wouldn't be dreaming right. Since I'm on the all-inclusive plan, I can have whatever I want. I can have the Chef prepare something just for moi! (I knew this dream was gonna be good!). I think I'll have my personal butler organize a fabulous meal for me right next to the ocean. Yes that's what I'll do. And it'll come with a perfectly paired bottle of wine - the best there is - money is no concern of mine. I hear the food here can be described as Meditteranean and having the rich textures of French cuisine, the exotic spices of Indian food and the spicy flavors of the Orient. Mmmm ...now my journey is complete.

What's that you say? What about things to do? Well who says I want to do anything on my dream vacation?! (Okay okay we'll do at least one thing) Let's see ... Oh I know, let's visit the local markets and see what treasures await. And then let's island hop! Just get out on the ocean blue and "discover" every bay and atoll - robinson crusoe style. Let's go snorkelling while we're at it, then stop for an unforgettable gourmet lunch at a secluded beach. Yes! I'm loving these things to do.

May you please speak to our technical staff? Excuse me? Who are you, what are you doing in my dream and what are you talking about? Oh yeah! I'm at work... I guess this is where the dream ends...but first chance I get, I'll be right back on Seychelles.

Here's a recipe I found online for a taste of Seychelles:

Seychelles Fish Curry (adapted from BBC.co.uk)

Ingredients

For Masale

2 tbsp coriander seeds

2 tsp cumin seeds

2 tsp black peppercorns

1 tsp cardamom pods

1 tsp cloves

Small piece of cinnamon

1 tsp ground chilli

1 tsp grated nutmeg

For Curry

2lb Snapper

Freshly ground black pepper and salt to taste

2 tbsp Canola oil

2 onions, chopped

½ tsp ground turmeric

2 cloves garlic, chopped

small piece ginger, shredded

3 tbsp tamarind water

2 sprigs thyme

1tsp flat leaved parsley

450ml fish stock or water

Method

To make the masale, take all the whole spices and dry roast them until lightly colored.

Then grind the nutmeg and chili and stir them in.

To make the curry, cut the fish into small pieces, season with salt and pepper, and set aside.

Heat the oil in a heavy pan and fry the onion until golden. Stir in the massalé and turmeric and sautee.

Add the fish, and all the other remaining ingredients. Bring to a simmer and cook for about 10 minutes until the fish is cooked.

Serve with basmati rice.

Taste The Caribbean - So Many Islands, So Many Flavors

You'd think that you'd find the same food on each Caribbean island, and you'd be right to a certain extent. But I can guarantee you that it won't taste the same! The way a Jamaican flavors rice, is surely not the same way a Barbadian (Bajan) would do it, and what one island calls Conkies the other calls Doucanou, and on and on the list goes. It can be quite confusing for visitors to figure out what they are eating and what foods they should try on each island. So I've compiled a list of favorites from each island to help you taste the Caribbean.

Jamaica
Jamaicans eat lots of ground provisions and rice. Staples include green banana, sweet potato, yams, breadfruit and ackee. It never ceases to amaze me how every house (it seems) has a breadfruit tree and an ackee tree and yet at every corner there is someone selling these items. They have no problem eating these foods for breakfast either so don't find it strange if a Jamaican offers you green banana, callaloo, sweet potato and salted cod for breakfast. They also love to flavor foods with coconut milk and allspice.

Barbados
Barbadian cuisine is heavily influenced by British and African fare. Breakfasts are traditional with eggs, toast, bacon, cereal etc. I like to say that Barbadians embrace a wide range of foods but make it their own. Barbadians love chicken, pork and lamb. A typical Barbadian meal would be rice and peas, beef or lamb stew, macaroni pie and baked chicken. Favorite ingredients for flavoring include onions, sweet pepper, garlic, thyme, ginger etc. Not many Barbadians cook with coconut milk or allspice like Jamaicans and some other islands.

If I had to sum up the flavor of Trinidadian cooking in one word it would be Curry. Their cuisine is heavily influenced by Indian and Amerindian cooking and so even fruits like golden apple and mango get the curry treatment. Popular spices used include garam masala, tumeric, ginger, and of course curry. Trinidadians are also known for preserving all kinds of fruits by salting them or by making them extremely sweet - and they can be quite addictive.

Red, White & Blue, Stars and Stripes, Fireworks and BBQ!!

Finally it's that time of year when the sun shines bright, the beaches are full and the grills come out. Added to that the fireworks and the celebrations...yes I'm talking about 4th of July! Now I'm not American but I do love to eat and celebrate, and the 4th of July is just the time for that!

This time I'm fortunate enough to enjoy the festivities here in Southern Cali. How about you? What's cooking this 4th of July and what's your list of places to see and things to do this weekend? Me? I plan on lazing around at the beach, maybe take in the sites and sounds of the San Diego County Fair and of course gorge myself with some good food! Then I'm gonna top that all off with some eye popping fireworks. Hopefully I can get a spot where I can see several fireworks displays at once!

St. Kitts - 69 square miles of Peace and Relaxation

Having grown up on an island (Barbados to be exact) it is sometimes very easy to take for granted the pristine, diamond kissed waters of the Caribbean Sea, the swaying palms, warm sunshine and cool refreshing breezes. And so the thought of visiting another Caribbean island - as opposed to a big city filled with endless shopping, amusement parks, subways, fast food and broadway shows - doesn't often cross one's mind when planning a trip. After all aren't all islands alike - sun, sea, sand? What could one island have to offer over another? Well I'll tell you...

As you may or may not know, all islands are not formed equally. Some islands are the result of volcanic activity while others are formed by coral polyps growing together to form a land mass. St. Kitts is a volcanic island. This fact alone makes it different from my homeland. Lush tropical vegetation and majestic central mountains adorn this little island. Added to that the warmth of the people and care free pace of life - it's the ultimate island getaway if you want to truly getaway from it all. Imagine a place where there are no traffic jams, no overcrowded beaches, and no loud noise preventing you from hearing the waves lap the sand as it slowly lulls you to sleep....Imagine St. Kitts.

Now don't get me wrong, the people are very much alive and there's lots to do like golfing, gambling(yes there's a casino at the Marriott), island hopping, taking a scenic railway tour, carnivals and more - but if you just want to sleep all day go right ahead. Me? I wanted adventure as always! So I got out there and took an island tour. You might think that a place that's only 69 sq miles wouldn't have much to see. But you'd be wrong. I didn't even get to see all the places I wanted to (so I guess that means another visit is pending). The places I did see were well worth the visit though. One place that stood out was Caribelle Batik. In all my life I have never seen so many different styles of batik clothing for men, women and children all in one location. It was a case of "too much choice dilemma" as we say in the islands. I was impressed. Needless to say I bought a nice wrap (which came with an instruction manual for different ways to wear it..amazing!) and a summer dress. The others with me bought shirts, wraps and dresses - and we were all eager to wear them. If you want authentic Caribbean wear...and a nice souvenir for friends this is a winner. Trust me!

Another place that stood out to me was the last possible stop on the southern tip of St.Kitts where you can look across the water and see their sister island, Nevis. There we found a rustic little restaurant/bar right by the water, next to a pier. This was the most hilarious stop of all. A bunch of us including children were all sitting around looking at the water when this huge pig came over to check out the new arrivals. Of course it scared the living daylights out of all of us, which then caused us to all break out laughing hysterically. Wilibur is his name! Yes the big brown pig is a regular in these parts and he wanted to give us a warm hello.

Now my trip would not have been complete without some "real" adventure. St. Kitts is actually the first place that I rode a quad bike and if I'm honest I would have to say that it's the best all terrain tour I've ever been on. It was like a roller coaster ride, up and down steep rugged hills, and in and out of lush forest and fields of cane....mind you I was terrified at first but boy did I have a blast riding at top speed and experiencing a true off road adventure!

So if you're ever tempted to think that all islands are alike...DON'T! Each has something unique to offer whether it be the people, the food, the landscape, the history or the way of life.

Now for a taste of the islands with this exotic yet truly refreshing drink perfect for the hot summer days.

Wonderful Wine...with an amazing view!

If you're like me and you have an appreciation for wine, you would've enjoyed my recent visit to Callaway Vineyard & Winery in the heart of Temecula, California. It was a bright, sunny day with a nice cool breeze - just perfect for a nice outdoor lunch complete with wine. This is the stuff that makes life oh so pleasurable!

Callaway Vineyard & Winery has been making quality wines since 1969 and they have a lovely outdoor restaurant called Meritage where the menu features a nice selection of appetizers, entrees and desserts wonderfully paired with wine. The views from this restaurant alone are well worth the trip! Panoramic views extend for miles - rolling hills, clear blue sky - just awesome! And the crisp fresh air - it's holiday for the spirit!

Being my first time there (or to a vineyard period) I found it hard to choose from the menu. Everything looked so good! From the salads to the pasta to the bread to the prime rib. Ooh! Finally I decided to try the Hangar Steak "Frites" - tender cuts of Beef in a light garlic sauce. Excellent choice! My partner decided to go for the Short Ribs prepared in a well-balanced red wine sauce. Another excellent choice! For dessert we had a berry cobbler with cream sauce. It was hot out the oven and the sweetness was just right, but not enough crust on top for me.

And then there was the wine - we ordered a whole bottle - perfectly paired with our meal. It was a melange of aromatic cherries, juicy plums and bittersweet chocolate....Mmmm. Too bad we couldn't drink the whole bottle between us!

My first visit to Wine Country left me wanting to return - it was the perfect way to spend a perfect day!

The Arid Zone - Some Desert and Dessert

I have been wanting to write about my trip to Tucson, Arizona for months now, but alas many things got in the way and I am only now ready to put finger to keyboard :) Special thanks to all of you who participated in my mini-poll - suprisingly you were all in agreement that you wanted me to write about Tucson next!

Coming from the Caribbean my mental image of Arizona was a HOT, dry, HOT, desolate, HOT, desert land.
You know, with all those westerns they show on TV how could I think otherwise? Well finally the opportunity came to go and I set out to find out what there was to do in Tucson,AZ . Of course I realised by then that there were nice hotels, restaurants, (it's a US city after all!) and that if I went in the Fall...it was not only cheaper but FAR from HOT! Actually it was cold to me (yes I do come from a tropical island). In terms of the 101 things to do in Tucson like the Cowboy shows, museums, science & technology exhibits, casinos, oddly enough none of those really appealed to me. I wanted adventure! And...adventure I got.

Yes, I surely found it in the off-the-beaten-track DIRT roads of the wide open desert, on the back of a red quadbike! It felt like we drove forever to get to this little "western movie" type looking bar in the middle of "nowhere", where our tour into the desert would begin. I was really pumped, until our guide started talking about how to manouevre our bikes if we came across a snake on the trail.... Excuse me?! Did you say the word snake? And did you then suggest that I not ride over it so as not to have it rain on the person behind me? let's talk about this for a second here...I wanted adventure... but you know the kind without dangerous animals.... Oh well I've already paid, but you can be sure I'm gonna ride right behind the guide!

Turns out there were no snakes (that I saw) but even if there were, this trip would have been well worth it! Talk about cacti of every size and shape! Talk about just getting away from the hustle and bustle and riding at top speed without a care in the world! Talk about the most spectacular sunset as you ride back!....and then talk about the DUST! This is not a tour for the beauty conscious...you will not recognize yourself after this tour. But who cares, you would've had a most amazing adventure!

Now no trip to anywhere would be complete without some good food! Pinnacle Peak is one place that stood out in my mind because it was so very unique. Not only is it a saloon, fitting with the whole western theme, but it is the home of the world famous Cowboy Steak. They also have a policy of absolutely no Neck Ties! I'm serious. I wore one just to test them (mind you it wasn't going with my outfit). They came around to my table with great ceremony ringing a cowbell that must have come from someone's ancestor (seriously that thing was old!), and reminding me of their policy. Then they took out a scissors and cut off my tie!!! And proceeded to hang it from the ceiling with the other millions of ties from patrons who dared to defy them! Why I never...?! Can you believe it? They cut off my tie! If it wasn't for the humongous (is that a word?) cowboy steak, that was just oozing with flavor and the great fun I had...I would've sued them for my tie! Oh well ... such is life.

The Arid Zone turned out to be a great trip. Good food, adventure (and of course shopping). Now for the Dessert. As promised here's one of my creations:

Mango Crumble

Ingredients

2 - 3 firm mangoes

Cinnamon

Brandy

Brown sugar

Water

All purpose flour

Salt

Butter

Method

Place water in a saucepan and bring to boil.

Peel mangoes and slice meat from the seed. Slice into strips.

Place mango strips in boiling water. Add sugar, cinnamon.

Stir till it becomes thicker, like a syrup.

Meanwhile combine flour, butter, salt until it has a crumb texture. Set aside.

Grease dish. Remove Mango mixture from heat. Add brandy. Stir well.

Place Mango mixture in dish. Cover with crumble. Bake until golden brown.

Cool and serve with vanilla icecream.

*optional - add dried cranberries to Mango mixture for added flavor. Bon appetit!

Long Absence

I know it's been too long since I last posted, but I've been traveling, moving and just plain busy! I'm sneaking a few moments in to update my blog. I had been thinking of posting about my trip to Branson, Missouri next, but so many travels have occurred since then. So I put it to you loyal readers which trip shall I post about next?

A little European, A little more Caribbean and A lot of French

From Maui, we travel now to the island of Martinique in the French Caribbean. I journeyed there with a group of friends in an attempt to improve my french and immerse myself in the culture. I would describe Martinique, as a tropical European paradise. On the one hand, you have the beautiful, pristine waters of the Caribbean Sea, the swaying palms and rich dense foliage, the rhythmic sounds of Zouk music and the creole infused french cuisine. On the other hand, you've got the infrastructure, fashion and flair of Europe...France to be exact. Of course, Martinique is still a colony of mother France, but they've managed to create a unique blend and identity for themselves.

I've always had a keen interest in the French - their language which is so romantic, their cuisine, their perfumes, their wines...the list could go on. This trip gave me the opportunity to enjoy it all. I was fortunate enough to be there for carnival time, so I donned my costume (more like a red outfit) and took to the streets of Fort-de-France, for Mardi Gras. It was certainly an interesting day, filled with parades, old scrap-heap-worthy cars packed with people driving up and down, music and of course food.

I had the unique opportunity to stay with a local family, and one thing I found very interesting - and might I add palatable - about the french is that they actually have 3 course meals at home! My cousin and I were sitting at lunch one day, and our hostess served us with some scrumptious french bread, tuna salad, french butter (of course!) and sliced tomatoes. My non-french cousin was voraciously digging in and was quite amazed that our host wasn't eating very much. So her curiosity got the better of her and she asked him. He answered her quite matter-of-"factly" and said, "Well I have to leave room for the next course" (yes he spoke English..), and she didn't skip a beat in her amazement..."There's more?". Yes my dear, there was indeed more. Next we were served a mouth-watering Lamb dish with potatoes. Too bad my cousin didn't have much room left for the other courses!

I came away from this trip with a better command of the french language, but even more so a zest for french food. Needless to say, I picked up some delicious recipes.

Plantain Mash

Ingredients:
5 ripe plantains
1/2 cup finely chopped tomatoes
1/2 cup finely chopped onion
1/2 cup finely chopped sweet/green pepper
1.5 cups grated English Cheddar Cheese
Butter (french)
White pepper
Seasoning salt to taste

Method:
Cook plantains in salted boiling water until soft.
Sautee tomatoes, onion, green pepper with butter and seasoning salt.
Mash plantains with sauteed ingredients, extra butter and grated cheese.
Serve hot with beef or lamb stew.

Enjoy!

Maui And Food

My most recent travels took me to the exotic island of Maui, one of the Hawaiian islands. If you haven't been there yet make sure you go before you die. It's a unique combination of island life and big city shopping...best of both worlds.

When you go to Maui make sure you attend a Luau...it's a good way to immerse in the culture and try some local cuisine. My personal favorite was the Lomi lomi salmon and teryaki beef. If you like your taste buds do not try the poi...it was the worst thing I have ever tasted.

If you are in the mood for some good Italian food in Maui, try Longhi's on Front Street. They have the best marinara pizza bread I have ever tasted. I was sorry I had waited to the last day to eat there...but at least I know the first place to go next time!

Ok let's have a taste of Maui with this recipe for Lomi Lomi Salmon.

Lomi Lomi Salmon

Salted Salmon chopped or shredded
Fresh firm but ripe tomatoes peeled & diced
1 Medium green onion chopped finely
Chopped Parsley (optional)

Mix all ingredients together in a bowl with your hand until thoroughly mixed. Serve Chilled.

Yup it is that easy! Enjoy!
